Wash the potato well, season with salt and pepper, and brush with olive oil. Wrap in aluminium foil and roast for 1h30min at 220C. Cut the bacon in cubes and fry slowly in some olive oil, until brown and crisp. When the potato is tender, cut it open, season inside with salt and pepper and place a knob of butter. Top the potato with the sour cream, bacon and watercress. Season with salt and pepper and some grated orange zest. Drizzle with olive oil and some of the orange juice and serve.
